Traditionally this is the season when a lot of us start
thinking about healthy eating and healthier habits. We join
gyms, try to get out and exercise, and try to eat healthier
foods. Often eating a balance, more sensible diet sounds
good on paper but can be awfully hard to follow-through on
in our daily lives. And some of the diets outlined can seem
pretty bland and dull. Most recommend whole grains, fresh
fruits and vegetables, and lean meat like poultry.
Chicken is very versatile meat that can be combined with so
many dishes and cooked in so many ways that it rarely gets
boring. Chicken can be sauted, baked, stir-fried, broiled,
barbecued - the possibilities are endless. The wonderful
thing about chicken is that it absorbs any of the many
flavors and spices you choose to produce great tasting
dishes.
Chicken is also popular because it is a quick cooker, making
it a favorite for the rushed weekday meals as well as
weekend gatherings. You can easily make a tasty chicken
cutlet dinner and serve it on the table in less than 25
minutes. Simply bake some honey mustard or breaded cutlets
for 20 minutes or so, serve with a side of mashed potatoes
(boxed spuds are just fine) and fresh, green sugar snap peas
for a delicious dinner. Save time later in the week by
making extra portions now for a great second serving.
If you have an kitchen grill like a George Foreman grill,
you can enjoy barbecued chicken all year long. If you're not
in the mood for cutlets, why not make your own kebobs as a
fun and fast meal. Cube your chicken and skewer the pieces
along with some pieces of red and green pepper and pineapple
chunks and grill. Serve with some herbed risotto and a fresh
baby green salad. This dish is sure to delight everyone in
your family.
Even without a wok, you can create great tasting chicken
stir-fry dishes in no time at all. You can use any
good-sized frying pan or skillet that will serve as your wok
quite easily. Stir-fry can be sweet or spicy and the chicken
can be cooked up with some great veggies to create a
well-rounded, healthy main dish. Serve with fresh fruits and
brown rice for a delicious dinner.
