The Beginner's Guide to Making Fried Chicken

Fried chicken is near the top of the list when it comes to
comfort food. Succulent moist chicken covered in a crispy
batter is one of the most delicious foods there is. You can
deep fry, pan fry, or even oven fry chicken. Fried chicken

Do not worry if you have never made fried chicken before.
There is a first time for everybody and frying chicken is
not difficult. You have to be careful when handling raw
chicken. Using hot soapy water to wash everything the raw
chicken has come into contact with is important. In order to
make a fried chicken recipe, you need to dip your chicken
into a batter and fry it until it is golden brown on the
outside and cooked all the way through.

One of the easiest ways to coat the chicken pieces is to put
the dry ingredients into a Ziploc bag and shake the chicken

spatter. Use tongs to remove the chicken from the hot oil.

start the thighs and legs first because these cook at 165
degrees F. Next add the breasts, turning the heat down to
160 degrees F and finally the wings which cook the fastest.

If your chicken is ready before the rest of the meal, do not
panic. Just put some water in an oven dish and put some
rolled up foil balls into it. Put a large piece of tin foil
across the top, put the chicken on this, and cover
everything with a lid. Keep it in a 175 degrees F oven until
the rest of the meal has finished cooking. The foil works as
a steamer, keeping the chicken moist and tender.

Your Dinner Recipes Easy and Practical

People are  busier today than ever in history.  Modern
technology may make things faster and easier, but the world
has compensated by demanding that people do more.  What
suffers is home life.  There's less time for daily chores.
That includes meals.  That's why people are always on the
look out for ways to make dinner recipes easy.  Fortunately
there are many sources and ideas for quick recipes and
easier ways to prepare food.

Forty years ago people cooked a lot more from scratch.  If
they ate sausage, they bought casings and meat and stuffed
the sausages themselves.  When they ate pasta they used home
made noodles and home made sauce made from tomatoes and
other ingredients.  Cooking was an all day affair.  With far
fewer women in the work force that was hard, but not
impossible.  But as people began to realize they wanted more
from life than cooking and cleaning every day, more and more
pre-packaged and pre-prepared foods began to appear.  Cake
baking, for example, slowly converted from mixing flour,
eggs, vanilla, milk, carefully melted chocolate and many
many other ingredients to opening a box and mixing in some
eggs and milk.  Today baking a good cake is a matter of
about an hour, only 5 or so minutes of which are mixing and
measuring.  In the old days it could take half a day to
properly make a cake.  The world has changed.

Many sources now tell people how to make quicker meals. The
television cooking shows are more popular than ever. Things
were tough when Julia Child talked about fancy French
cooking while the Galloping Gourmet hit the sauce every day.
There's more focus in today's shows on cooking for the rest
of us. It's more 20 minute meals and foods that can be
prepared in under a half hour. It's more than just a can of
tuna. The shows deliver quick cooking that looks a lot more
complex.

Pre-packaged and ready made foods are a lot better than they
were, too.  Many grocery stores now carry deli meals
including already cooked chickens, meat loaf, pot roast,
mashed potatoes and more.  It's like buying a restaurant
meal at the store, then bringing it home to eat.  Many of
these foods can be refrigerated or frozen to eat another
day.  That's another idea.  It's often easier to prepare all
the meals for the week on the weekend, then freeze them for
reheating during the week.  Many foods including lasagna are
actually better reheated.

It's still possible to have good meals without breaking the

meal was prepared I found out they had cooked everything in

cooking was finished, the "pot" was broken open and the

Are you one of those people who think barbequeing is only

treats!

Wintertime grilling can be a Family affair. In fact,
whenever we have friends over for a Holiday party, my grill
and smoker is going strong. I've never had a complaint about
the food we serve at these parties. In fact, many want to
know when we're having another one!

Grilling in the dead of Winter requires a few special
techniques. First off, build your fire early. If you're
using wood or charcoal, add a little extra. Your grill or
smoker will take longer to heat up and take more fuel to
keep it hot. Make sure you take this into consideration
before you throw the meat on.

Cold Winter winds can sap the heat right out of an electric
smoker. Make sure you have an insulation blanket handy. You
can find these at most places that carry electric smoker or
online at retailers like Cabelas. The blanket will keep your
smoker warm and will allow your meat to cook evenly. Don't
use anything flamable to insulate your smoker and do not use
normal insulation! That should go without saying, but you
know someone is likely to try it.

grill or smoker hot. Cold Winter winds can quickly sap the
heat right out of your unit. This lowers the internal
temperature to an usafe level, especially if you're smoking

green. Now it's dormant, brown and brittle. Just right to
ignite with a spark from your grill or smoker. If you have
any doubts, hose downt the immediate area around your
cooking area.

Amanda's Amazing Hot Chocolate Recipe

When you think of great hot chocolate, you generally think
of New England, the upper Midwest, and other cold weather
areas.

Maybe so, but do not overlook Louisiana. Specifically, South
Louisiana, where food and drink are taken very seriously.

In fact, my very favorite hot chocolate recipe belongs to a
university administrator, wife, and mother who grew up in
Abbeville, where nearly everyone is an accomplished cook,
even the men. Here is Amanda's recipe.

Put ten cups of dry powdered milk in a large bowl.

Add two and a half cups of Coffee-Mate or an equivalent
product.

Fold in eighteen ounces of cocoa mix. Amanda uses Nestle's.

Add 1 1/4 cups of powdered sugar, and mix everything
together thoroughly.

When the mixture is completed, add two heaping teaspoons to
a cup of hot water to try it, and add a bit more of any
ingredient to suit your taste. It is great as is, but I
generally add a bit more cocoa.

Whether you make a little ingredient adjustment or not, you
and your family will love the results.
