is not surprising at how many spaghetti sauce recipes there
are out there. Some are a family secret that are handed down
to new generations, while others are eagerly shared with
friends and family members so that everyone has a chance to

Mexican food is popular all over the world and for great
reasons. There is such a variety when it comes to Mexican
dishes. You can taste combinations you never have before.
Many people appreciate the great Mexican minds that created
popular Mexican foods. The foods thrill our taste buds, the
smells excite our minds, and the looks please our eyes,
enrich, and inspire our souls.

A lot of the Mexican food available to day is based on
traditional Mexican recipes, which the Aztecs and Mayas
invented. There are also some exotic recipes featuring
iguana, rattlesnake, and spider monkeys, which are not
unheard of ingredients but are seldom used in modern Mexican

Many Mexican foods are nutritionally well balanced. They
contain plenty of vitamins and minerals and most dishes are

Mexican recipes. America has added fats to traditional
Mexican recipes, making them less healthy than they would be
in Mexico if they were prepared in the authentic way. There
are a lot of fresh vegetables used in Mexican food, such as
peppers, beans, tomatoes, garlic, and onions.

Foods differ in the different regions of Mexico. It depends
on the climate and geography of the area along with ethnic
differences. Northern Mexico is known for its dishes that
contain meat, while in Southern Mexico, dishes popular
include vegetable and chicken. Seafood is commonly served in
the Mexican state of Vera Cruz. Vera Cruz is a Mexican state
that is very long and tropical with lowlands that runs up
and down the Gulf of Mexico. It is easy to get fish such as
red snapper, snook, grouper, and mojarra. Mojarra is a
prized fish in the area. Crab, lobsters, and oysters are
abundant.

As well as the ocean, over forty rivers run through this
state. There are many types of shellfish and freshwater fish
available. These seafood recipes are prepared in different
ways. Seafood can add a different taste to popular authentic
Mexican recipes and it is a very healthy part of the diet.

Mexican Food History: A Melding of Cultures

Americans have long held great affection for Mexican food.
Many American cooks enjoy recreating such Mexican recipe
favorites as enchiladas, tacos, quesadillas, and other
spicy, colorful dishes. Aside from the intrigue of the
recipes themselves, however, Mexican food history is just as
interesting and fun. Get to know the roots of an American
favorite that hails from south of the border.

Although the Mayan culture is often credited for giving
Mexican food its roots, the strongest influence came from
the Spanish when they invaded Mexico in 1521. Cortez, the
Spanish explorer, along with his followers, introduced many
new foods into the Mexican culture. Pigs, cows and sheep as
well as herbs, dairy products and various spices such as
garlic had never graced a Mexican table until that time.

On the flip side, the Mexicans also introduced new food to
Cortez. He had never had chocolate, vanilla, peanuts, beans,
coconuts, avocados, squash, tomatoes, and corn. So for all
that, Cortez brought with him and introduced into the
Mexican culture, he also took away as much, balancing the
trade of regional foods.

According to Mexican food history, many of the traditional
Mexican foods have roots in other cultures as well as the
Mexican culture. For instance, quesadillas, a mainstay in
Mexico and considered to be authentic Mexican food actually
not only have roots in Mexican traditions, but in Spanish as
well. The corn tortilla, thought to be quintessential
Mexican, is actually native American.

The cheese, pork, beef, and lettuce that grace so many of
our favorite Mexican dishes, including the quesadilla, are
Spanish. The hot sauce that is made from chili pepper,
though, is indigenous to Mexico. However, it is a little
known Mexican food history fact that many of the spices
thought to be Mexican are actually Spanish in origin. Black
pepper, cinnamon, coriander and oregano are several spices
that are often used in Mexican cooking but are not native to
the country.

The French are yet another chapter in Mexican food history.
Under a brief French occupation in the 1860's, Mexico was
introduced to other new foods and cooking methods. This
resulted in popular dishes like stuffed chilies in a walnut
sauce, known as chiles en nogado. These dishes, French
inspired with a strong Mexican flair, have made their way
through the various cultures to meld together and create
dishes that the world can enjoy.

One of the most popular adaptations of Mexican food and an
integral part of Mexican food history is the influence from
the Southwest United States, namely southern Texas. This
style of Mexican food, dubbed "Tex-Mex" has become a
favorite of people all over the world. North meets south in
this cultural combination of northern Mexico and
Southwestern Texas. In many restaurants today, it is more
Tex-Mex than authentic Mexican food that is being served.

Mexican food history is rich and varied. With so many
interesting cultural influences throughout time, it seems
that Mexico has been more of a culinary melting pot. What
have resulted, however, are delicious foods, rich in flavor
that has soared in popularity. It does not seem to be

No doubt that herbs and spices are common staples in all
homes' kitchens. Flare and flavor are given to each dish
that they are added to. They maintain the healthy body along

Everyday we use a lot of herbs and spices, which have more
benefits far from we think. They are of medical usage along

healthy tea, cinnamon can be drunk with adding some drops of

well. It is used in lamb dishes and in stews. It can be
tasty if add to eggs. The flavor of rosemary is similar to

important characters, such as building immunity against
cancer, and preventing cardiovascular diseases as well.
Garlic is used widely along with. Since it reduces blood
pressure, many of physicians are advising people to use it.

The famous fennel is known of its antioxidant powers. It has

of antioxidants and is also believed to contain
anti-microbial and antiviral substances. Peppermint can
sooth an upset stomach and may help to relieve pain. Fresh
peppermint is used with strawberries and other fruits,
vegetable dishes containing peas or carrots and is a
refreshing addition to any salad.

We eat foods with vitamins to help our bodies to function
properly. Taking vitamin and minerals has many benefits for
our body, such as the positive effect they have on the body

bodies. As important as Vitamin D is for our body and

much of a good thing'. Although we don't always think in

taking too much of this vitamin can be harmful. However,
taking too much of this vitamin can cause serious side
effects. Some symptoms of too much Vitamin D, or possible
Vitamin D overdose, are loss of appetite, vomiting, nausea,
constipation and abdominal pain. Vitamin D overdose can also
lead to hypercalcemia, a medical condition where there are
abnormally high levels of calcium compounds in our
bloodstream. Liver damage is another possibility that could
occur from too much Vitamin D. Some people mistakenly
believe if they take twice the recommended amount of Vitamin
D, that they will get twice the benefits of what they'd get
with the normal dosage. This idea is not only incorrect but
can be dangerous to your health.

Eat High Quality Vitamin D rich foods

Many foods are rich in Vitamin D, allowing us not to have to
take Vitamin D supplements. However, the quality of the
Vitamin D foods has a bearing on the benefits we'll get from
them. In many cases, generic foods are as good as name brand
foods. It is important to read the labels on the back of the
food items to educate yourself on what you're eating. In the
case of fresh fruit and vegetables, it's important to eat
high quality food. Food that is in the "bargain bin" because
it's old may still be edible, but a lot of the vitamins and
minerals have been lost. The same is true with the
expiration dates on products such as milk. The foods that
will last the longest generally are the ones with the
highest Vitamin D levels.

Research What Your Needs Are

Five Burger Recipes Guaranteed to Make You a Backyard Hero

Nothing is better than a good burger cooked on an open
grill. Here are five recipes that can help you produce
burgers that will delight your friends and family.

Grilled Inside-Out Southwestern Cheeseburgers- Serves 4

Next to my wife and my mother, Betty Crocker is my favorite
woman. This recipe came from her website, bettycrocker.com.

The ingredients you'll need to make these burgers:

one and a half lb lean ground beef two tablespoons finely
chopped onion two tablespoons drained Old El Paso chopped
green chiles eight slices pepper Jack cheese, 2x1x1/4 inch
(about four oz) four kaiser rolls, split a quarter cup Old
El Paso taco sauce or Old El Paso Thick 'n Chunky salsa

To prepare:

Heat gas or charcoal grill. In medium bowl, mix beef, onion
and chiles. Shape mixture into 8 thin patties. Top each of
4 patties with 2 slices cheese. Place remaining beef patties
on top; pinch edges to seal securely. Place patties on
grill over medium heat. Cover grill; cook 14-16 minutes,
turning once, until burgers are slightly firm when pressed
in center. Add rolls, cut sides down, for last 4 minutes of
grilling or until toasted. Serve burgers on rolls with taco
sauce.

Zesty Burgers- 4 Servings

1 to 1 1/4 pounds of lean ground beef 1/4 cup of chopped
onion 2 tablespoons of green pepper, finely chopped 3

pepper your favorite burger toppings 4 split buns, toasted

Prepare as follows:

Combine lean ground beef with onion, green pepper, ketchup,
horseradish, salt, mustard, and pepper; mix lightly. Shape
into 4 patties about 1/2 inch thick. Grill or broil to
desired doneness, about 5 to 7 minutes on each side. Serve
with a variety of toppings and split toasted buns.

Texas Stuffed Grilled Burgers- Five Servings

Required ingredients:

5 pounds of lean ground beef 6 tablespoons of Worcestershire
sauce 2 teaspoons hickory seasoning (optional) salt and
pepper to your taste 2 cups of onion, chopped 2 cups of
fresh, chopped 2 cups of cooked ham, chopped 3 cups of
shredded cheddar cheese

To prepare:

Preheat your outdoor grill for high heat. When hot, lightly
oil the grate. In a bowl, mix together the ground beef, the
Worcestershire sauce, the hickory seasoning, and the salt
and pepper until well blended. Make 8 or 10 balls, and
flatten them into patties. On one half of the patties, add
the onions, mushrooms, ham and cheese. Carefully cover the
piles with the remaining patties, being sure to seal all of
the edges of the patties together tightly and enclose the
filling. Cook the patties for 8-10 minutes per side, or
until meat is well done, and cheese in the center is melted.

Marinated Hamburgers

3 T. Lemon Juice 1 1/2 tsp. seasoned salt 1 T.

1 tsp. vinegar

To prepare:

Mix the above ingredients.

Shape 1-1/2 bounds of ground beef into patties.

Put the burgers in a covered container and pour the marinade

Cook when ready, using high heat to sear the burgers and
retain the juices.

Mushroom Stuffed Burgers- serves 6

mushrooms on 6 of the patties. Then top with the remaining
6 patties, sealing the edges tightly.

Broil or grill the 6 burgers to your taste, top with cheese,
and serve on toasted buns.

The History of Pasta in Italian Food

The most widely recognized element of Italian food today is pasta. Pasta is a signature of Italian food in all parts of the globe. It is easy to store and prepare and therefore became the ambassador of Italian food to the world. Pasta has a much older history than other common dishes in Italian food like pizza and tomato sauce.

There are many myths surrounding the time when pasta actually entered into Italian food. The most common of these myths is that Marco Polo introduced it to the country from his extensive travels. However, pasta was already a part of Italian food during Marco Polo's life. To get to the heart of the matter you must travel even further back in history. In fact the most accepted theory on the introduction of pasta to Italian food takes us back to the eighth century. During this time the Arab invasions greatly influenced Italian food and are the most likely start of pasta's life in Italy.

Since the wheat used for this early pasta thrived in Italy, it quickly spread and by the 1300's dried pasta was immensely popular and found all over the country. The appeal of pasta to Italian food was its nutrition and its long shelf life. These factors made pasta a great candidate for long ship voyages and because of this it was one of the first Italian foods to be introduced to the world. By the time pasta made its world debut much advancement had been made and there were many different shapes and forms of pasta being used in Italian food. The Italians had also developed ways to make pasta faster and more efficiently, making it an integral part of Italian food and Italian life.

The next important phase of pasta's development in Italian food was the introduction of the tomato of course. Today pasta and tomato sauce go hand in hand when thinking of Italian food, but the marriage wasn't made until 1839. Prior to this time tomatoes were just being introduced to the world from the Americas and many Europeans believed them to be poisonous. It took a long time for people to trust the tomato enough to eat it and include it in Italian food. However, once the tomato was accepted it was welcomed with open arms and took off in Italian food, especially in the southern regions of Italy.

Today one only has to look at the numbers to see just how big a role pasta plays in Italian food. Italians eat over three times as much pasta as Americans. Their pasta consumption is over sixty pounds per person per year. It's no wonder that pasta is considered the cornerstone of Italian food. In fact, pasta is used so extensively in Italian food that Italy must import most of its wheat in order to keep up with the demand. This popularity of pasta and Italian food has caused pasta to be mass produced. This has lead to an inferior quality of pasta being used in American Italian food. The best pasta is still found in Italy where they stick to the same recipes handed down through the generations. A true Italian food lover must try some authentic pasta made in Italy if they want to capture the authentic taste of Italian food.

Can You Cook Live Lobsters Humanely?

Many people object to the common practice of cooking a live
lobster by plunging it into boiling water. Those with
tender hearts and animal rights philosophies are concerned
about the pain the animal experiences and advocate more
humane ways of creating lobster dinners.

Scientists have searched for information regarding the
amount of pain a lobster is capable of feeling. Lobster
lovers everywhere may be surprised at what they found.

A lobster cannot feel pain the way humans know it. Its
nervous system is too undeveloped, and its tiny, simple
brain is only a bunch of nerve endings. The brain of a
lobster is about the size of a grasshopper's brain and lacks
complexity.

Because of this lack, it is also extremely doubtful that a
lobster is able to feel pain the way people do. Based on
these findings, the practice of cooking live lobsters
continues. Three common methods of cooking a live lobster
are by steaming, boiling, or grilling.

To steam a lobster you need to start with a four to five
gallon pot which is the ideal size for steaming six to eight
pounds of lobster. Put about two inches of seawater (if you
have access to it) or other salted water in the bottom of
the pot. Put your steaming rack inside the pot, and bring
the water to a rolling boil over high heat. Add the live
lobsters one at a time. Put the lid on the pot and start
timing. One pound of lobster takes approximately 10 minutes
to steam. With six to eight pounds, it will take closer to
an hour. Make sure that you rearrange the lobsters in the
pot half way through the cooking process.

Using the four to five gallon pot, add three quarts of water
for every 1 to 2 pounds of lobster you want to boil. Next
add one-fourth cup of salt per gallon of water. After
heating the salted water to a rolling boil, add the lobsters
one at a time. One pound of lobster needs to be boiled
about 8 minutes, while it will take 50 minutes to an hour
for six to eight pounds. Time the process carefully and
halfway through the cooking time give the lobsters a good
stir.

To grill a lobster you must first par-boil it. You do this
the same way you boil a lobster; however, you limit the
boiling time to five minutes. Remove the lobsters from the
pot and plunge them into cold water so that they won't
continue to cook. Drain the lobsters. To prepare them for
grilling, place each lobster on its back on a cutting board.
Split the lobster down the middle and remove the black tail
vein and the sand sac near the head. Baste the lobster with
butter. Grill with flesh side down for 5 to 6 minutes. Turn
it over, baste it again, and cook another 4 to 5 minutes.

Although there are still people who spend time advocating
humane treatment for lobsters, most are willing to accept
the scientific data which says they do not suffer. The only

A Home for a Lobster

Did you ever look at a lobster swimming around in the little
fish tank at a restaurant and wonder where he lived before
he was caught? You may remember he lived in the ocean, but
did you realize that most lobsters live in only the coastal
regions around the world. Once considered unfit to eat,
lobsters have risen in such popularity in the last few
decades that fishermen can hardly capture enough of them to
meet demand.

Right after he's born, a very tiny lobster looks nothing
like an adult lobster and has a 1/1000 chance of surviving
to adulthood. During the first 15 days of his life, he
lives in the top three feet of water in the ocean and is
extremely vulnerable to predators. During this period he
molts three times before moving into the fourth stage as a
miniature adult.

During the fourth stage the lobster swims very well and
looks for a permanent place to live on the ocean floor. He
may choose a home in a softer habitat, such as the salt
marsh peat around Cape Cod, but most generally he'll choose
a harder spot, such as an area with a cobble (small rocks)
bottom.

Cobble is an exceptionally suitable habitat for lobsters.
There are many crevices and cracks around and under the
small rocks that make up the cobble which offers him places
to hide and wait for his food to come to him. While many
coastal regions offer rocky bottoms, Maine is ideal in that
it also has just what lobsters like, clean, cold water.

After molting once more and moving into stage five of his
life, the lobster moves into his new ocean bottom home.
During his first year he spends the majority of his time
hiding in his crevice or tunnel in order to keep from being
eaten by his numerous predators. After this first year he
spends a lot of time during the next three years hiding in
the ocean bottom kelp and seaweed while looking for food.

Adolescent lobsters have great survival instincts that keep
them hidden for the first few years of their lives. If he
were to swim out in the open ocean when he was still this
young, he would be eaten within a matter of a few minutes.
When he gets larger he will make another move to an area
where there are larger rocks for him to hide in. He might
also choose to live in a muddy or sandy area anywhere
between the edge of the continental shelf and the shore.
Wherever he lives, he will live alone, because he's not a
social creature.

No matter where a lobster lives, there are sure to be
fishermen after him. If he manages to evade natural
predators and fishermen, however, he can live a very long
life. During colonial times when lobsters were abundant,
there are reports that some of the lobsters were five or six
feet long.

Lobsters don't get the chance to grow as large in this era
of modern fishing techniques. The biggest one on record was
caught in 1977 just off the coast of Nova Scotia. It
measured in at somewhere between three and four feet, and it
weighed a mighty 44 pounds, 6 ounces. It was estimated that
he was around 100 years old. How about that!

Find Your Perfect Coffee Recipe

Coffee can be tasted and enjoyed in so many different
varieties and ways. There is a plethora of recipes that
every coffee lover must try. Below are some of the ones to

Although, unusual, definitely worth it. The first recipe
involves baking a coconut at 300 degree Fahrenheit for
thirty minutes. Then after it is removed and cooled down,
the shell can be broken open and the flesh grated. Then the
flesh and milk of the coconut should be combed with about
half a cup of regular milk. Then this is all put into a pan
and heated until it is thick. The mixture should then be
strained. This mixture is then put into a cup of coffee and
sipped.

Then there is the mocha, but this one is Mexican is style.
It involves a teaspoon of chocolate syrup combined with a
dash of cinnamon and nutmeg. Then this is poured into a cup
of coffee with sugar added to taste. Whipping cream is the
perfect completion to this beverage. Then there is something
called the Cubano which is enjoyed straight and shot like
tequila. The Americano, which is espresso and hot water, can
be diluted using rum or hot milk. However, no more than bout
a tablespoon of milk should be added, otherwise the American
is ruined.

For a holiday treat, try the Grog. This is when an orange is
peeled and then divided into slices. Then the same is done
to a lemon. Then a peel about the same size of one orange
slice is placed in the bottom of a cup. A little butter,
brown sugar, and ground clove should be mixed together with
some nutmeg and cinnamon. This is all combined with about
half a cup of coffee with some heavy cream to taste.

The Viennese is dark chocolate melted with one tablespoon of
light cream. Then about half a cup of coffee is slowly added
and whipped until frothy. Once it has settled, then it is
sprinkled with cocoa and cinnamon. It should be tasted with
the pinky raised in traditional aristocrat style.

The Turkish style is the most simple. The coffee is boiled
with the water and not strained. A cup of water is poured
into a pot and brought to a boil with about half a teaspoon
of sugar. Once it has been removed from the heat then about
a teaspoon of coffee is added and should be stirred to
remove some of the heat. After a layer of foam appears the
coffee should be allowed to settle and cool. Then it can be
enjoyed.

Vietnamese coffee is one of the most popular iced coffee
beverages. The coffee should be put through a

and like a shot. Some may prefer to dilute the drink with

To make the Viennese, melt an eighth cup of dark chocolate

the coffee. Yes, you will need to boil it. Turkish coffee
has a very strong flavor. Begin with some finely ground
Turkish coffee. Pour one cup water into the dzezva and bring
to a boil after adding a half teaspoon of sugar to the pot.
Once it reaches a boiling point, remove it from the heat and
add one teaspoon of the Turkish coffee. Stir, place it back
on the heat and then remove it after you see a layer of
foam. Once it has cooled and settled, drink up and enjoy
this robust, delicious blend.

The Vietnam is one chilled coffee you do not want to miss.
Once you find a Vietnamese coffee press, you are on easy
street as that is the challenging part. Now, place the
grounds into the press, pour one tablespoon of condensed

Have You Had Beans Lately?

Now is the perfect time to give beans and other legumes
another try. They are convenient, inexpensive and provide
your body with plenty of protein. If you're not yet tempted
to put a pot of beans on the stove, keep reading for some
good reasons why cooking with beans, dry peas, and lentils
is a good idea.

They Are Cheap

Here's my favorite reason to cook with beans... it is really
inexpensive to do. I can buy enough beans to cook three
meals for my family for under two dollars. I like to buy
beans at my local costco or a mexican supermarket by the
way. They are usually quite a bit cheaper and I get a larger
variety than what my regular grocery store has to offer.

You really don't need to fix meat for every dinner. Try
replacing one or two meals that you would traditionally
serve meat with hearty bean dishes instead. Some ideas are
to add cooked beans to pasta sauces instead of ground beef
and to make a big pot of chili or bean soup. Of course it's
OK to add a little meat for flavoring. I like to add some
leftover ham to my bean soups and stews for example. Using
less meat each week will save you quite a bit at the grocery
store.

Reason 2 - It's Healthy

One of the big health benefits from eating beans is the fact
that the soluble fiber in them helps the body remove a
certain kind of cholesterol - the one that's bad for your
heart from your body. I guess that's where the old saying
"Beans Beans Good For Your Heart" comes from.

If you are diabetic, you definitely want to make beans a
regular feature on your meal plan since they have shown to
increase the insulin receptor sites in your body. But that's
not the only reason beans are a health super food. These
little legumes have even been shown to prevent cancer.

Reason 3 - It's Yummy

You can make all kinds of different dishes with beans since
they lend themselves to different flavors. You can make
spicy chili dishes or mild beans and rice. Then there's
beans soups that taste almost sweet, smoky black beans with
cumin and exotic dahl dishes made with middle eastern
spices. Add some lentils or beans to your pasta sauce
sometime for a yummy dish that's also good for your waist
line.

My favorite thing to do with leftover beans, lentils or
chick peas is to turn them into a dip. Since they are
already cooked, I just add them along with a little bit of
liquid and some seasonings to my food processor and process
until I have a creamy smooth dip. Serve alongside some
veggies, bread or chips. Even my kids love these dips and I
feel much better giving this to my family than some other
fat-laden dip.

Reason 4 - It's Fast and Simple

Let me explain why I think beans are quick and easy. Yes,
you do have to cook some of them for quite some time (don't
bother with the pre-soaking by the way. They will cook just
fine without), but the good thing is that you don't have to
hang around. Just let them simmer at the back of your stove.
You can also cook them in your slow cooker. I like to start
mine in the morning on low. By dinner time they are nice and
tender and ready to eat.

What makes beans super convenient for me is that I can cook
them in large batches and then freeze them. If I use them
within the next couple of days, I just put them in the
fridge of course. Everything else is frozen for later use.
You don't even have to thaw them, just heat and serve those
beans or use them in your dishes.
